- heat a pan and dry roast the whole red chilies, carom seeds, coriander seeds, black peppercorns, cumin seeds, cloves & cinnamon sticks on medium heat till an aroma of spices comes and they get a golden color.
- then keep the roasted spices in a bowl let it cool down, and grind to a powder.
- now mix the ground spices and the dried ginger powder, salt, citric acid, black salt, and mango powder.
- Keep it in an airtight jar, and use it when required.
