For Rasmalai Milk:
- 600ml milk
- 500ml evaporated milk
- 250ml sweetened condensed milk
- 2 cinnamon sticks
- 6 green cardamoms
- 1 star anise
Other Ingredients:
- Plain cake (36 thick slices or as needed to fit a 310mm x 250mm x 60mm tray)
- 4 tbsp crushed pistachios
For Frosting:
- 600ml chilled double cream
- 75g icing sugar
- 2 tsp vanilla essence
1. Prepare Rasmalai Milk:
- In a pan, combine milk, evaporated milk, sweetened condensed milk, cinnamon sticks, green cardamoms, and star anise.
- Mix well and cook on medium flame for 5 to 8 minutes.
- Strain the milk to remove the spices and set it aside.
2. Assemble the Cake:
- Arrange the plain cake slices in the tray as shown in the video.
- Pour the hot rasmalai milk over the cake slices.
- Allow the cake to cool completely.
3. Make the Frosting:
- In a bowl, combine chilled double cream, icing sugar, and vanilla essence.
- Beat the mixture until it thickens.
- Transfer the cream into a piping bag with a star nozzle, or spread it evenly over the cooled cake.
4. Garnish and Chill:
- Sprinkle the crushed pistachios over the frosted cake.
- Cover the tray and place it in the fridge to chill.
5. Serve and Enjoy:
- Serve the Rasmalai Three Milk Cake chilled and enjoy this delightful Eid Al Adha treat.
