Dough:
1: plain flour 1/2 kg
2: salt 1 tsp
3: water as required for a medium hard dough
4: ghee 1/4 cup
Batter:
1: ghee 200 g
2: corn flour 2 tbs
3: ghee or oil for frying
1: mix plain flour, salt then add water slowly and make a medium hard dough, then place the dough in the ghee and leave for 15 minutes.
2: mix ghee, corn flour keep aside.
3: place the dough on working surface make a hole in the middle and stretch the dough with the mixture of ghee and corn flour, double it and add little ghee mixture on top, leave for 10 to 15 minutes.
4: now stretch the dough again using the ghee mixture, double it top it with the mixture leave to rest again.
5: you need to stretch the dough for 8 to 9 times as in the video, let it rest in every stretch & not forgetting to add the mixture as this helps it not sticking the layers.
6: heat the ghee or oil for frying.
7: roll the dough on your fingers go round 4 times and pull it and bring in through the middle, leave to rest for 5 minutes.
8: flatten the dough on your palms slightly, spread it on your hands.
9: fry it in the oil for 7 minutes or till golden, but do not forget to hit the dough on the top as it helps it to open the layers(make sure oil is hot but not boiling as it will not open the layers).
10:once fried keep on a strainer to remove extra oil.
11:serve it in hot milk with sugar, granish with crushed almond, pistachios.
