Ingredients
For the Red Chutney:
- Kashmiri red chilies – 15 (for color and mild heat)
- Button red chilies – 12 (adds spicy kick)
- Vinegar – 2 tsp
- Medium tomatoes – 4 (roughly chopped)
- Garlic cloves – 10
- Fresh ginger – 2-inch piece
- Green chilies – 2
- Salt – 1 tsp
- Sugar – 1.5 tbsp (adjust to taste)
- Dark soy sauce – 2 tsp
- Cooking oil – 4 tbsp
- Tomato ketchup – 3 to 4 tbsp
For the Dough:
- Plain flour – 2 cups
- Salt – 1 tsp
- Cooking oil – 2 tbsp
- Water – as needed (to knead a firm dough)
For the Chicken Filling:
- Chicken mince – 600g
- Carrot – 1 medium, finely chopped
- Onion – 1 medium, finely chopped
- Garlic cloves – 5, ginger – 1.5-inch piece, green chili – 1 (all finely chopped)
- Salt – 1 tsp
- Dark soy sauce – 2 tbsp
- Black pepper – 1 tsp
- Fresh coriander leaves – 2 tbsp, chopped
Recipe Instructions
Step 1: Prepare the Red Chutney
1. Soak the Chilies: In a bowl, soak Kashmiri and button red chilies overnight with water.
2. Cook the Ingredients: Place both types of chilies in a saucepan. Add 1 cup water, vinegar, tomatoes, ginger, and garlic. Cover and cook on medium heat for 15-20 minutes until tomatoes soften.
3. Cool and Blend: Remove tomato skins and allow the mixture to cool. Blend the mixture with vinegar, sugar, salt, green chili, and soy sauce to make a smooth paste.
4. Thicken and Preserve: In a frying pan, heat 4 tbsp oil. Add the chutney mixture and cook on medium-high until it thickens. Stir in tomato ketchup and let cool. Store in the fridge for up to 2-3 weeks.
Step 2: Make the Dough for Momos
1. Mix Ingredients: In a bowl, add plain flour, salt, oil, and a little water. Knead until you get a medium-hard dough. Cover and set aside.
Step 3: Prepare the Chicken Filling
1. Combine Ingredients: In a mixing bowl, combine chicken mince, carrot, onion, garlic, ginger, green chili, salt, soy sauce, black pepper, and coriander. Mix thoroughly.
Step 4: Assemble the Momos
1. Roll the Dough: Divide the dough into small portions and roll each into thin circles. Use a round cutter to shape them evenly.
2. Add the Filling: Place a spoonful of the chicken filling in the center of each dough circle. Fold and seal the edges firmly, pressing the sides together to form a crescent shape.
Step 5: Steam and Fry the Momos
1. Steam the Momos: Prepare a steamer or use a large pot with a greased pizza tray (with holes) as a steamer. Arrange the momos on the tray and steam for 15 minutes, or until they’re firm and non-sticky.
2. Deep-Fry the Momos: Heat oil in a pan and deep-fry the momos until golden and crispy.
Step 6: Serve
