For Marination:
1: mutton 1 kg
2: turmeric 1/2 tsp
3: salt 1 & 1/2 tsp
4: red chilli powder 1/2 tsp
Dry Roasted Masala:
1: cinnamon stick 4 pieces
2: cloves 1/2 tsp
3: star anise 1
4: green cardamom 10
5: cumin seeds 1 tsp
6: fennel seeds 1 tsp
7: black peppercorn 1 tsp
8: coriander seeds 1 & 1/2 tbsp
9: dry red chilli 10
10: desiccated coconut 1/2 cup
For Curry:
1: oil 1/2 cup
2: fennel seeds 1/2 tsp
3: bay leaves 3
4: cinnamon stick 2
5: onions 2 large (grind)
6: ginger & garlic paste 1 tbsp (heaped)
7: tomatoes 3 large (grind)
8: fresh coriander handful
1: in a bowl add meat, salt, turmeric, red chilli powder mix and keep aside for 1/2 hour.
2: in a fry pan dry roast cinniamon stick, cloves, star anise, green cardamom, cumin seeds, fennel seeds, corainder seeds, black peppercorns, dry red chilli roast on medium flame till the spices change colour and then add coconut and roast till changes colour, leave it to cool and then grind it to a powder.
3: heat oil add fennel seeds, bay leaves, cinnamon sticks, onion, ginger & garlic paste mix and fry on high flame till changes colour.
4: then add tomatoes and cook on high flame till the liquid from the tomatoes dries.
5: now add the dry roasted and grinded masala powder, meat, water 1 & 1/2 glass mix well and wait for a boil and then cover and cook on low to medium flame till the meat is tender and oil comes on surface.
6: add fresh corainder mix.
7: serve hot with roti, naan, boiled rice.
