For the Filling:
- 2 tbsp oil
- 1 medium onion, finely chopped
- 1 tbsp crushed garlic
- 500g boneless chicken, cut into small pieces
- 1 tbsp vinegar
- 1 tbsp dark soy sauce
- 1 tbsp hot sauce
- 3 tbsp tomato puree
- 1/2 tsp salt
- 1 tsp paprika powder
- 1 tsp crushed red chilli
- 1 tsp oregano
- 3 tbsp tomato ketchup
- 1/4 cup water
- 1 medium bell pepper, deseeded and chopped
Other Ingredients:
- Bread slices
- Mayonnaise
- Cheese slices
- Mozzarella cheese
- Oregano
- Crushed red chilli
1. Preheat the oven to 355°F (180°C, Gas Mark 4).
2. Heat oil in a pan, add onion and garlic, and fry over medium-high heat until onions are soft.
3. Add chicken and fry on high heat until it changes colour.
4. Now add vinegar, soy sauce, hot sauce, tomato puree, salt, paprika, crushed red chilli, oregano, tomato ketchup, and water. Mix well, cover, and cook over medium heat until the water evaporates.
5. Add bell pepper and cook for another minute or two with the chicken. Then, turn off the heat and let it cool.
6. Take bread slices, place them on a baking tray, spread mayonnaise on each slice, followed by chicken filling, cheese slices, and another slice of bread to cover the sandwich.
7. Sprinkle mozzarella cheese, oregano, and crushed red chilli on top.
8. Place the tray in the preheated oven and grill or bake until the cheese melts and turns slightly golden.
9. Serve hot with fries and cold drinks.
Note: You can prepare the filling in advance, let it cool completely, and store it in an airtight container in the fridge for up to a week.
