1: 1/2 cup popcorn kernels
2: 1 tbs oil
Caramel Coating:
1: 1 cup golden brown sugar
2: 1/2 cup butter
3: 1/2 cup golden syrup
4: 1/2 ts vanilla extract
5: 1/2 ts baking soda
1: in a pan add the oil and popcorn kernels & turn on heat on medium.
2: Keep the pan covered until you hear the first "POP!". When the rest of the kernels start to pop quickly, move the lid slightly to allow steam to escape.
3: Turn the stove off and move the pan away from the heat when the popping slows down.
4: in a pan add sugar, butter, golden syrup and on the stove over medium heat.
5: When the sauce reaches the "hard ball" stage, add in vanilla and baking soda mix well and remove from the heat.
6: line parchment paper on a tray, spread the popcorn and spread the sauce over them.
7: preheat oven to 270f, 140c, gas mark 1 & and place the popcorn tray and bake for 20 to 25 minutes.
8: cool down enough to break the caramel popcorn apart.
9: serve and enjoy.
