Ingredients:
- 1 kg Mutton
- 2 large Onions (boiled for 7 minutes, ground, and water discarded)
- 1 cup Thick Yogurt
- 2 tbsp Ginger & Garlic Paste
- 3 tbsp Lemon Juice
- 1 tsp Salt
- 2 tsp Paprika Powder
- 2 tbsp Heaped Tikka Masala Powder
- 1 tsp Garam Masala Powder
- 2 tsp Crushed Red Chilli
- 3/4 cup Oil
- 4 Bullet Green Chillies (sliced)
- Handful of Fresh Coriander Leaves
- Coals for smoking the curry
1. Sauté the Onions:
Heat oil in a pan and add the ground onions and ginger & garlic paste. Fry on high flame until they turn golden.
2. Add Spice Mix:
Stir in tikka masala powder, paprika powder, salt, crushed red chilli, garam masala powder, and lemon juice. Mix the spices well.
3. Cook the Meat:
Add the mutton and cook on high flame for 7-8 minutes until the color changes.
4. Introduce Yogurt:
Pour in the yogurt and continue to cook the meat for another 6 minutes on high flame until the oil separates.
5. Simmer and Tenderize:
Add 1 1/2 glasses of water, wait for it to boil on high flame, then cover and cook on low to medium flame until the mutton becomes tender and the oil separates (adjust the water as needed).
6. Smoke the Curry:
Heat the coals and place them in a bowl. Drizzle some oil on the hot coals, cover, and wait until the smoke settles.
7. Final Touch:
Add coriander and sliced green chillies, and mix well.
8. Serve and Enjoy:
