For Fajita Chicken:
1: boneless chicken 1 kg (thin strips)
2: salt 1 & 1/2 tsp
3: paprika powder 2 tsp
4: red chilli powder 1 & 1/2 tsp
5: crushed red chilli 2 tsp
6: crushed black pepper 1 tsp
7: garlic powder 2 & /12 tsp
8: cumin powder 2 & 1/2 tsp
9: lemon juice 4 tbsp
For Rice:
1: oil 1/3 cup
2: garlic 1 tsp
3: bell pepper 2 medium (deseeded & sliced)
4: onions 2 medium (sliced)
5: chicken powder 2 tsp
6: rice 800g (boiled with 1 & 1/2 tbsp)
7: fresh coriander handful
1: in a bowl add chicken and all ingredients, mix well and marinate for 30 minutes.
2: heat oil fry garlic and then add the marinated chicken mix well and fry the chicken till the chicken changes colour on high flame.
3: add 1/2 cup water and cook till the chicken is tender on medium flame.
4: then add bell-pepper, onions and sauté for 3 minutes on high flame, add chicken powder, fresh coriander mix.
5: add the boiled rice mix well and simmer on low flame 8 minutes.
6: serve hot and enjoy with cold drinks.
