1: Flour 2 1/2 cups
2: Baking Powder 2 tsp
3: Baking Soda 1/2 tsp
4: Salt 1 tsp
5: Black Pepper Powder 1 tsp
6: Butter 4 Tbsp melted
7: Eggs 2 lightly beaten
8: Cheddar cheese 1/2 cup grated
9: Butter Milk 3/4 cup
10:Sweet Corn Cream 1 can
11:Boiled and Shredded chicken 1 cup
12:green chilli 2 (finely chopped)
13:Cheddar Cheese extra for topping
14:Paprika Powder or red chilli powder for sprinkling
1: Pre-heat oven at 180c, 350f, gas mark 4.
2: Grease a cup cake tray with oil.
3: Stir together flour, baking powder, baking soda, salt and black pepper together.
4: Add Cheddar cheese, shredded chicken, butter milk, eggs, sweet corn and melted butter to the flour mixture and mix well.
5: Divide this mixture between cups in the cupcake tray.
6: bake for 20 to 25 minutes or until risen and golden brown.
7: then take out & sprinkle with extra cheddar cheese, red chilli or paprika powder. Bake until the cheese melts.
8: serve hot.
