For Onion Paste:
- 3 large onions
- 6 green chillies
- 3 tbsp coriander leaves
Other Ingredients:
- 3/4 cup oil
- 2 tbsp ginger & garlic paste
- 1 kg mutton or lamb chops
- 1 tsp black pepper powder
- 1 1/2 tsp salt
- 1/2 tsp turmeric
- 1 1/2 tsp red chilli powder
- 2 tsp paprika powder
- 2 tsp heaped cumin seeds (dry roasted & crushed)
- 2 tbsp lemon juice
- 1 cup yogurt
- Handful of coriander leaves
- 5 green chillies
1. Prepare the Onion Paste: In a blender, grind the onions, green chillies, and coriander leaves into a smooth paste.
2. Cook the Onion Mixture: Heat 3/4 cup of oil in a large pot. Add the onion paste along with the ginger & garlic paste. Fry on high flame until the onion mixture changes colour and any liquid has evaporated.
3. Add the Lamb Chops: Add the mutton chops to the pot and fry with the onion mixture on high flame until the chops change colour.
4. Add Spices: Sprinkle in the black pepper powder, salt, turmeric, red chilli powder, paprika powder, crushed cumin seeds, and lemon juice. Mix well and cook for about 7 minutes on high flame, stirring continuously.
5. Incorporate the Yogurt: Add 1 cup of yogurt to the pot, mix well, and cook on high flame for another 4 minutes, stirring continuously.
6. Cook the Chops: Pour in 1 1/2 glasses of water, cover the pot, and cook on low to medium flame until the meat is tender and the oil separates from the masala. Add more water if necessary to achieve the desired consistency.
7. Finish with Fresh Herbs: Add a handful of chopped coriander leaves and 5 whole green chillies. Mix well.
8. Serve: Serve hot with roti, naan, salad, and chutney.
