For Marination:
1: chicken 1/2kg (breast) & 1/2kg (thigh) (make mince)
2: ginger & garlic paste 2 tbsp
3: green chilli paste 1 tbsp
4: vinegar 1 tbsp
5: black pepper powder 1/2 tsp
6: red chilli powder 2 tsp
7: salt 1 tsp
To Make Special Red Chutney:
1: Kashmiri red chilli 20 (soaked over night in water)
2: water 1/4 cup
3: black salt 2 tsp
4: salt 1/2 tsp
5: cumin powder 1 tsp
6: black pepper powder 1/2 tsp
7: garlic cloves 6
8: sweet tamarind chutney 1/2 cup
For Cooking:
1: oil 1/2 cup
2: cumin seeds 1 tsp
3: onions 5 (grind)
4: ginger & garlic paste 1 tbsp
5: garam masala powder 1 tsp
6: salt 1/2 tsp
7: coriander powder 1 tbsp
8: cumin powder 1 tbsp
9: turmeric 1 tsp
10: black pepper powder 1 tsp
11: red chutney 4 tbsp (the one i made)
12: tomatoes 5 (grind)
13: water 1/2 cup
14: almond paste 4 tbsp
15: yogurt 1 cup
16: water 1 cup
17: bullet green chilli 4 (chopped)
18: dry fenugreek leaves 1 tbsp
19: fresh coriander handful
1: in a bowl add chicken mince with all ingredients under marination, mix well and leave it for 30 minutes.
2: in a blender add all ingredients under red chutney and grind to a smooth paste & keep aside.
3: heat oil add cumin seeds, onions, ginger & garlic paste and fry on high flame till gets golden.
4: now add garam masala powder, salt, coriander powder, cumin powder, turmeric, black pepper powder, red chutney, tomatoes, water 1/2 cup mix and cook on medium flame till the oil separates.
5: add almond paste, tomatoes mix well and add the marinated mince, water 1 cup & mix, cook on medium flame till the oil separates.
6: now add bullet green chilli, fenugreek leaves, coriander leaves mix well.
7: serve hot with red chutney, onion rings, naan, roti, paratha.
