For Sauce:
1: mayonnaise 1 cup
2: red chilli powder 1 tsp
3: cinnamon powder 1/4 tsp
4: garlic powder 1 tsp
5: ginger powder 1 tsp
6: oregano 1/2 tsp
7: powdered sugar 1 tsp
For Egg Filling:
1: oil 2 tbsp
2: cumin seeds 1 tsp
3: green chilli 3 (chopped)
4: onions 2 medium size (chopped)
5: tomatoes 2 medium size (chopped)
6: salt 1 tsp
7: red chilli powder 1 tsp
8: coriander powder 1 & 1/2 tsp
9: turmeric powder 1/2 tsp
10: garam masala 1/2 tsp
11: eggs 7
12: fresh coriander handful
For Paratha:
1: atta dough
2: oil
3: eggs (as many required for the parathas)
For Sauce:
1: mix all ingredients and keep in the fridge.
For Egg Filling:
2: heat oil in a pan, add jeera and green chillies, sauté for few seconds.
3: add onions, tomatoes and salt, red chilli powder, coriander powder, turmeric powder and garam masala, cook for 2 minutes on low to medium flame.
4: in a separate bowl whisk eggs with, add the whisked eggs and scramble until the eggs are cooked.
5: add some freshly chopped coriander leaves and mix well, take it from the heat and keep aside for later use.
For Paratha:
1: take a small piece of dough, spread and add ghee, sprinkle flour and fold it, then roll it long twist it make a boll. roll it and cook it as shown in the video, remove t a keep aside.
2: beat 2 eggs with, salt 1/4 tsp, red chilli powder 1/4 tsp add this in the frying pan and place the paratha on top and once the bottom part is cooked flip it.
To Assemble:
1: take the egg paratha spread the sauce, add the egg mixture fold.
2: serve hot and enjoy.
