For Dough:
1: plain flour 1 cup
2: sooji 2 tbsp (semolina)
3: oil 2 tbsp
4: salt 1/2 tsp
5: sugar 1/2 tsp
6: ajwain 1/4 tsp (caraway seeds)
7: water 1/4 cup
For Filling:
1: potatoes 2 large (boiled & mashed)
2: turmeric 1/4 tsp
3: red chilli powder 1/2 tsp
4: cumin powder 1/4 tsp
5: coriander seeds 1/2 tsp (dry roasted & crushed)
6: dry mango powder 1 tsp or chaat masala powder
7: garam masala powder 1/2 tsp
8: ginger & garlic paste 12 tsp
9: salt 1/2 tsp
10: fresh coriander 2 tbsp
For Coating:
1: plain flour 2 tbsp
2: water 1/4 cup
For Frying:
oil
1: in a bowl add all ingredients under dough, mix well and cover with a damp cloth and keep aside for 20 minutes.
2: in a bowl add all ingredients n a bowl under filling, mix well.
3: in a bowl add water, plain flour mix well.
4: heat oil.
5: sprinkle plain flour and roll the dough, add the filling and spread well, roll as shown in the video firmly.
6: cut the filled dough.
7: dip in the plain flour mixture.
8: place it in the oil and fry till golden, for 12 to 15 minutes on medium flame.
9: serve hot with sweet imli chutney or ketchup.
