Step 1: Cook Mutton in Pressure Cooker
- Add mutton, onion, tomatoes, 1 tsp salt, and water into a pressure cooker.
- Cook for 25 minutes or until the mutton is soft. (Use more water if using a handi.)
Step 2: Add Khada Masala
- Once cooked, add:
- Crushed coriander & cumin seeds
- Red chilli powder
- Crushed black pepper
- Lemon juice
- ½ tsp salt
- Mix well.
Step 3: Add Aromatics & Ghee
- Now add garlic, ginger, and ghee.
- Cook on medium-high flame until the ghee separates.
Step 4: Mix in Yogurt
- Add whisked yogurt and stir continuously.
- Cook till the mixture thickens and ghee separates again.
Step 5: Final Tadka & Garnish
- Add green chillies, dry red chillies, and coriander leaves.
- Simmer on low flame for 5 minutes.
