Instructions
Prepare Masala:
- Grind all pulao masala ingredients into a fine powder. Set aside.
Fry Base:
- Heat oil in a large pot. Add sliced onions and fry on high flame until light golden.
Sauté Chicken:
Add ginger-garlic paste and sauté for 4–5 minutes. Add chicken and fry until color changes.
Spice It Up:
- Add red chilli, salt, and 2 tbsp of homemade pulao masala. Mix well. Add ½ cup water, cover, and cook on medium flame until chicken is tender and oil separates.
Add Rice:
- Add washed rice. Pour water—about 1½ inches above the rice level (or 2 cups water per 1 cup rice). Add 1 tbsp salt, mix, and cook on high flame until water dries.
Layer Flavour:
- Sprinkle kewra + food color mixture, coriander leaves, green chillies, and fried potatoes on top.
Dum Process (Steaming):
Heat a tawa (flat pan) for 10 minutes on high flame. Place the rice pot on top, cover the lid with a tea towel, and steam:
- 10 minutes on high flame
- 20 minutes on low flame
Serve Hot:
Enjoy with green raita, salad, or achar.
