To Boil Mutton:
1: mutton 1 kg (boil mutton with the ingredients below)
2: salt 1/2 ts
3: ginger & garlic paste 1 ts
4: water 6 cups
For Masala:
1: rice 750g (boiled with salt 2tbs)
2: thick greek yogurt 1 cup
3: onions 2 large (finely sliced)
4: tomatoes 3 medium (sliced)
5: fried onions 1/2 cup
6: lemon veges 1/2 (sliced)
7: green chilli 4
8: dry plums 10
9: black cardamom powder 1/2 ts
10:green cardamom powder 1/2 ts
11:star anis powder 1/2 ts
12:black pepper powder 1 ts
13:salt 1 & 1/2 ts
14:red chilli powder 1 ts
15:turmeric 1/2 ts
16:kewra water 2 tbs
17:yellow food colour 1/4 ts
18:ginger & garlic paste 1 ts
19:ghee 1/2 cup
20:fresh coriander handful
BOIL RICE WITH SALT, BOIL MEAT WITH SALT, GINGER & GARLIC PASTE, WATER.
1: heat ghee add onions, ginger & garlic paste and fry till gets golden on high flame.
2: then add tomatoes, salt, red chilli, turmeric, black pepper, black cardamom powder, star anise powder, green cardamom powder, water 1/2 cup mix and cook on high flame till the oil comes on surface and tomatoes cooked.
3: now add the yogurt, dry plums, boiled mutton mix cover and cook on medium flame till the ghee comes on surface.
4: to assemble: add the ghee from the curry, rice, mutton with its masala, remaining rice, kewra water mixed with food colour, fried onions, fresh coriander, green chilli, lemon cover the lid with tea towel and simmer for 10 to 15 minutes.
5: serve hot and enjoy.
