Make a Paste:
1: ginger 3 inch piece (peeled)
2: garlic 1 & 1/2 bulb (peeled)
3: coriander seeds 3 tbsp
4: fennel seeds 1 & 1/2 tbsp
Other Ingredients:
1: oil 1 cup
2: onions 2 large (finely sliced)
3: green chilli 6 (chopped)
4: cumin seeds 1 & 1/2 tsp
5: cinnamon stick 3 pieces 1 inch
6: black cardamom 3
7: green cardamom 7
8: black pepper corns 1/2 tsp
9: cloves 12
10: bay leaves 3
11: boneless chicken 1 kg (cut in cubes)
12: salt 1 tsp
13: yogurt 1 cup
14: rice 1 kg (washed)
15: salt 1 tbsp (heaped)
16: yellow food colour 1/2 tsp mixed with 1/3 cup water
1: in a blender grind ginger, garlic, fennel seeds, coriander seeds.(can add a little water if required)
2: heat oil add onions and fry on high flame, remove half onions for garnishing (optional) and then add green chilli, cumin seeds, cinnamon stick, black cardamom, green cardamom, black pepper corns, cloves, bay leaves and fry for a 1 or 2 on high flame.
3: add the chicken, salt 1 tsp and fry for 3 minutes on high flame.
4: now add the grinned masala of ginger, garlic, fennel, coriander add yogurt mix and cook on high flame till the oil comes on surface and chicken tender.
5: then add the washed rice, water, salt 1 tbsp cover and cook on high flame till the water dries.
6: now add the fried onions, food colour mixed with water, cover the lid with a tea towel and place it on the pot and for first 5 minutes on high flame and then simmer on low flame for 10 to 12 minutes.
7: serve hot with Garlic Raita.
