For Topping:
1. 1/2 cup walnuts (crushed or chopped)
2. 1/2 cup almonds (crushed or chopped)
3. 1/2 cup brown sugar
4. 1/3 cup salted butter (melted)
5. 1/4 cup honey
For Cake:
1. 2 eggs
2. 1/2 cup sugar
3. 1/4 cup vegetable oil
4. 1 cup plain flour
5. 2 tbsp desiccated coconut
6. 1 tsp baking powder
7. 1 tsp vanilla essence
8. 1/2 cup warm milk mixed with 1 tbsp warm butter (microwave to warm)
Preheat oven to 150°C (300°F), gas mark 2.
1. In a bowl, mix all the ingredients under the topping and set aside.
2. Grease an 8-inch cake tin and place baking paper in it.
3. Add the nut mixture, spreading it evenly in the tin.
4. In another bowl, whisk together eggs, sugar, and oil until combined.
5. Add plain flour, desiccated coconut, baking powder, vanilla, and the warm milk-butter mixture. Whisk well.
6. Transfer the batter onto the nuts and place the cake in the preheated oven on the middle rack. Bake for 30 to 40 minutes.
7. Once baked, let it sit for a few minutes, then turn the cake tin upside down.
8. Serve and enjoy the Walnut and Almond Upside Down Cake!
