For Cooking Dal:
1: chana dal 400g (soak overnight)
2: moong dal 300g (soak overnight)
3: green chili 8
4: salt 1/2 tsp
5: turmeric 1/2 tsp
6: ginger & garlic paste 1 tbsp
Other Ingredients:
1: ghee or oil 3/4 cup
2: cumin seeds 1 tsp (heaped)
3: bay leaves 2
4: cinnamon stick 2 piece
5: onions 2 medium (finely chopped)
6: ginger & garlic paste 1 & 1/2 tbsp
7: tomatoes 4 large (grind)
8: turmeric 1/2 tsp
9: korma masala powder 3 tbsp (leveled)
10 :corainder powder 2 tsp
11: red chili powder 1 tsp
12: mutton mince 1 kg (can use chicken or beef mince to)
13: coals to smoke the curry
14: yogurt 1 cup (room temperature & beaten)
15: dry fenugreek leaves 1 tbsp (heaped)
16: garam masala powder 1 tsp
17: fresh coriander handful
18 :green chili 4
1: for cooking dal: in a handi add both dal, water enough to cook them well with, green chili, salt, turmeric, ginger & garlic paste.
2: heat oil or ghee add cumin seeds, bay leaves, cinnamon sticks, onions, and fry on high flame till gets light golden, on high flame.
3: add ginger & garlic paste and fry further 5 minutes, on high flame.
4: now add tomatoes, turmeric, korma masala, coriander powder, red chili powder mix well and cook on high flame till the oil separates.
5: then add the mince and cook on high flame till the mince changes color.
6: heat the coals to smoke the curry.
7: add the yogurt and cook on low to medium flame till the oil comes on the surface.
8: smoke the mince as shown in the video.
9: then add the boiled tender dal mix well (add more salt to your taste).
10: add dry fenugreek leaves, garam masala powder, green chili mix and cook on high flame till gets a little thick.
11: now add fresh coriander mix.
12: serve hot with roti, nan, paratha, or boiled rice.
