To Make Curry Masala:
1: oil 4 tbsp
2: onions 2 large
3: ginger 2 inch piece
4: garlic cloves 12
5: green chilli 2
6: tomatoes 3 large (deseeded)
To Make Powder Masala:
1: coriander seeds 1 & 1/2 tbsp
2: cumin seeds 1 tbsp
3: black cardamom seeds of 2
4: black peppercorn 1/2 tsp
5: green cardamom 12
6: cloves 10
7: star anis 1
8: cinnamon sticks 2
9: whole red chilli 6
10: dry fenugreek leaves 1 tbsp
Other Ingredients:
1: oil 1/2 cup (heaped)
2: chicken 1 kg
3: salt 1 & 1/2 tsp
4: red chilli powder 1 & 1/2 tsp
5: turmeric 1 tsp
6: green chilli 5
7: fresh coriander 3 to 4 tbsp
1: to make the curry masala: heat oil add onions and fry on high flame till gets soft.
2: then add ginger and garlic fry on high flame for 5 minutes.
3: add tomatoes and cook till gets soft on high flame and then leave to cool and grind to a paste.
4: to make masala powder: heat a frying pan add all ingredients under masala powder and roast till gets light golden then add dry fenugreek leaves and roast for a few seconds, leave to cool and then grind to a powder.
5: heat oil add chicken and fry till changes colour.
6: add the dry roasted masala powder, salt, red chilli powder, turmeric, curry masala mix well and cook on high flame for 4 minutes.
7: add 1 cup of water mix, cover and cook on low to medium flame till the chicken is tender and oil separates.
8: then add green chilli, fresh coriander mix well.
9: serve hot with roti, paratha.
