For Filling:
1: chicken mince 800g
2: onion 1 large (finely chopped)
3: carrot 1 medium (grated & squeezed)
4: garlic 1 & 1/2 tbsp (crushed)
5: bell-peppers 2 medium (finely chopped)
6: salt 1 tsp (heaped)
7: black pepper 1 tsp
8: red chilli powder 1 tsp
9: oregano 1 tsp (heaped)
For Dough:
1: eggs 4
2: oil 60ml (or) 10 tbsp
3: salt 1 & 1/2 tsp
4: baking powder 2 tbsp
5: milk 400g
6: fresh coriander 3 tbsp
7: wheat flour 480g
8: potatoes 300g (pealed, grated)
For Topping:
1: Cheddar cheese 3 cups (or) mozzarella cheese (or as much or less you like)
2: bell-peppers chopped 3 tbsp
3: jalapeno 2 tbsp
4: crushed red chilli 1 tsp
5: tomatoe ketchup 3 tbsp
Preheat Oven 15 Minutes Before 180c, 350f, Gas Mark 4.
1: in a bowl add mince with all ingredients under filling, mix well.
2: in a bowl add eggs, oil, salt, baking powder, milk and beat well, then add fresh coriander, wheat flour, potatoes and mix well till combined.
3: grease the baking tray with 3 tbsp of oil.
4: transfer the dough batter half and spread evenly.
5: place the chicken filling on the top as shown in the video.
6: top it with the remaining dough batter and spread evenly.
7: place it in the oven on the middle rack and bake for 40 to 45 minutes till gets golden on the top and forms a crust.
8: once baked cut slices as big or small you like, top it with cheese, bell pepper, jalapeño, crushed red chilli, ketchup and place the tray to bake for further 15 minutes or till the cheese melts.
9: serve hot with some salad and drinks.
