Cake Balls (this makes 40):
1: 125g salted butter (softened)
2: 1&1/2 tsp vanilla extract
3: 3/4 cup caster (superfine) sugar
4: 3 eggs
5: 1& 1/2 cups plain flour
6: 1 tsp baking powder
7: food colour of your choice
8: milk 1/2 cup
Cake:
1: 250g salted butter (softened)
2: 2 tsp vanilla extract
3: 340g caster sugar
4: 6 eggs
5: 3 cups plain flour
6: 2 tsp baking powder
7: milk 1 cup
8: 2 cake tins 8 inch
Icing:
1: cream cheese 250g
2: salted butter 150g(softened)
3: icing sugar 3 cups
4: vanilla extract 2 tsp
Preheat Oven 160c, 325f, gas mark 3.
Cake Balls:
1: in a bowl sift plain flour, baking powder, sugar.
2: in the same bowl add eggs, vanilla, milk, butter and beat on medium speed until combined, then increase speed to high and beat until smooth.
3: divide mixture in 6 bowls, and add food colour and mix well.
4: spray cooking oil in the silicone cake pop mold, and add the batter 1 tbs in each mold cover and bake for 45 minutes.
5: then allow to cool n the mold before popping them out, once cooled cut of the edges and bake the rest cake balls.
Cake: preheat oven 160c, 325f, gas mark 3.
1: in a bowl sift plain flour, baking powder, sugar.
2: in the same bowl add, butter, vanilla, eggs, milk and beat for 3 to 4 minutes till smooth and combined on high speed.
3: spoon one third of batter in the greased cake tins, arrange the cake balls, spoon the rest batter over the cake balls, and bake for 1 hour till golden or tested with a skewer.
4: allow to cool completely.
5: then drop a dollop of icing on one of the cake and spread it, place the other cake and cover all over the cake.
6: decorate the cake as you like.
7: serve and enjoy.
Icing:
1: beat butter till smooth.
2: add the cream cheese and beat till combined.
3: now add vanilla, icing sugar and beat till combined and fluffy.
