1: bhindi (okra) 2 kg (cut in 1 inch piece)
2: onions 1 & 1/2 kg (sliced)
3: tomatoes 8 (sliced)
4: onion 2 large (finely sliced)
5: knorr chicken cub 1
6: garam masala powder 1 tsp
7: turmeric 1/2 tsp
8: kalonji 1 tsp (Nigella seeds)
9: cumin seeds 1 & 1/2 tsp
10: crushed red chilli 2 tsp
11: red chilli powder 1 tsp (levelled)
12: salt 1/2 tsp
13: dry button red chilli 8 (cut in 2 pieces)
14: bullet green chilli 4 (sliced)
15: fresh garlic 2 bulb (sliced)
16: oil 1/2 cup
17: fresh coriander handful
1: heat oil and fry the bhindi till crisp on high flame, keep in a sieve to drain extra oil.
2: heat oil and fry the onions till soft and sides slightly brown on high flame, keep in a sieve to drain extra oil.
3: in a pan heat oil add onions 2 large and fry till golden on high flame.
4: now add tomatoes, kalonji, cumin seeds, salt, red chilli powder, red chilli powder, turmeric, knorr cube, red red chilli, cook on high flame till the tomatoes get soft, now add water 1 cup wait for a boil on high flame, then cover and cook on low to medium flame till the oil comes on the surface.
5: then add the garlic mix well and cook on medium flame for 1 & 1/2 minutes.
6: now add the fried onions, bhindi mix well, add green chilli, garam masala powder, coriander mix cover and simmer on low flame for 2 to 3 minutes.
7: serve hot with Roti.
