For Making Kabab:
1: mutton mince 1/2 kg
2: onion 1 large (finely chopped)
3: ginger & garlic paste 1 tbsp
4: carom seeds 1 tsp (ajwain grind to a powder)
5: garam masala powder 1 tsp
6: red chilli powder 1 tsp
7: salt 1 tsp
8: green chilli 5 (grinned)
9: fresh coriander 1/3 cup
10: oil for frying
For Making Rice:
1: rice 1/2 kg (boiled 80% with salt 1 tbsp)
2: tomatoes 2 (sliced)
3: bell pepper 3 small (cut in small cubes)
4: carrots 2 small (peeled and cut in thin slices)
5: ginger & garlic paste 1 tbsp
6: cumin seeds 1 tsp (dry roasted & crushed)
7: salt 1 tsp
8: garam masala powder 1 tsp
9: crushed red chilli 2 tsp
10: turmeric 1/2 tsp
11: fresh ginger 1 inch (Julian)
12: green chilli 3 (chopped)
13: coal for smoking the rice
14: dry fenugreek leaves 2 tbsp
15: oil 1/2 cup
16: resh coriander 1/2 cup
1: to make kabab, in a chopper add all ingredients under kabab (except oil) and blend till combined.
2: grease palms and make kabab, keep aside.(at this stage you can freeze them too).
3: heat oil, add the kababs and fry till golden, on medium flame, once fried keep it on paper towel.
4: heat oil add ginger and garlic paste, fry till changes colour.
5: now add tomatoes, garam masala powder, salt, turmeric, crushed red chilli, crushed cumin, mix and cook on high flame till the tomatoes are cooked and masala is made.
6: then add carrots, green chilli, ginger, kababs mix well, cover and simmer on low flame for 10 minutes.
7: add bell peppers mix and sauté for 2 minutes on high flame.
8: add fresh coriander mix.
9: heat the coal.
10: now add the boiled rice, mix well, place the hot coal on foil and place it on the rice, add oil cover till the smoke settles.
11: once the smoke settles, then take a tea towel, cover the lid and simmer rice first 5 minutes on high flame and the on low flame for 10 minutes.
12: serve hot with mint chutney or garlic.
