FOR DHOKLA BATTER:
1: gram flour 1 cup
2: semolina 1/4 cup
3: thick greek yogurt 1/2 cup
4: water 1/2 cup
5: sugar 1 tbs
6: oil 1 tbs
7: Eno fruit salt 1 ts (heaped)
8: salt 1/2 ts
9: turmeric 1/2 ts
10:green chilli 2
11:fresh ginger 1 ts
FOR TEMPERING:
1: water 1 cup
2: fresh coriander 2 tbs
3: sugar 2 tbs
4: green chilli 3
5: mustard seeds 1 ts
6: oil 1 tbs
7: curry leaves
1: crush green chilli, ginger.
2: in a bowl sieve the gram flour, add semolina, yogurt, water mix well and leave it for 5 minutes.
3: then add the crushed ginger and green chilli, salt, turmeric, sugar, oil mix well.
4: then add the Eno mix fast.
5: grease a microwave dish, add the mixture in it and cover.
6: place the dish in the microwave and cook on high for 4 minutes.(can test if done but piercing a knife in the middle if wet cook more if dry done).
7: once cooked keep aside to cool.
FOR TEMPERING:
1: heat oil add mustard seeds, green chilli, curry leaves, coriander fry for a minute, then add water, sugar and cook till the sugar dissolves.
2: remove the dhokla cut in pieces and add the cooked syrup on each piece.
3: the dhokla will absorb the syrup.
4: serve and enjoy.
