- 200g tamarind (imli)
- 1/2 cup sugar (adjust to taste)
- 1 tsp salt
- 1 tsp red chilli powder
- 4 to 5 glasses of water
1. Place the tamarind in water and mash it with your hands.
2. Add red chilli powder, salt, and sugar. Mix well and cook on high flame until thickened.
3. Strain the thick chutney mixture using a sieve. Press the pulp in the sieve to extract as much as possible. Discard the tamarind seeds.
4. Allow the chutney to cool completely, then store it in an airtight container in the fridge.
5. Serve with spring rolls, samosas, pakoras, or dahi bhallas.
Note: Adjust the salt and sugar according to your taste preference. The chutney should have a balanced sweet and salty flavour.
