1: chickpeas 1 can (375g drained)
2: lemon juice 1/4 cup
3: tahini paste 1/4 cup (check the link for homemade)
4: garlic 2 pieces (crushed)
5: cumin powder 1/2 tsp
6: salt 1/4 tsp
7: water 3 tbsp
8: olive oil 2 tbsp
For Garnishing:
1: olive oil 3 tbsp
2: paprika powder 1/4 tsp
1: in the bowl of a food processor, combine the tahini and lemon juice and process for 2 minutes.
2: add the olive oil, garlic, cumin, salt to the whipped tahini and lemon juice, grind for further 1 minute.
3: now add the drained chickpeas and grind till gets nice smooth and thick, grind for 2 minutes, then slowly add 3 tbsp of water until you reach the perfect consistency.
4: taste for salt and adjust as needed, serve hummus with a drizzle of olive oil and dash of paprika.
5: serve with falafel, as a dip with baked pita naan, carrots, cucumber etc, hot or cold.
NOTE: Store homemade hummus in an airtight container and refrigerate up to one week.
