For Cake:
1: 3 cups plain flour
2: 2 cups granulated sugar
3: 1 tsp baking soda
4: 1/2 tsp salt
5: 1 tsp cinnamon
6: 1 cup unsweetened applesauce
7: 1/4 cup vegetable oil
8: 3 eggs
9: 200g can crushed pineapple (with juice)
10: 2 cups mashed ripe bananas
11: 1 cup chopped walnuts
12: 1 & 1/2 tsp vanilla extract
For Frosting:
1: 400g cream cheese
2: 250g salted butter
3: 9 cups powder sugar
4: 1 tbsp vanilla essences
5: 1/2 tsp food colour (red, green, yellow)
1: grease 3 cake tins 8 inch.
2: sieve plain flour, salt, baking soda, cinnamon powder, mix with a dry spoon, then add the sugar and mix well again.
3: now add oil, vanilla, eggs, apple sauce, whisk it till combined.
4: add the mashed bananas, pineapple, walnuts, whisk it till combined.
5: divide the batter in the greased cake tins.
6: bake for 25 to 30 minutes (or till checked with a tooth pick in the middle of the cake if comes out clean it is done, my took 50 minutes).
7: once baked leave to cool in tin for ten minutes, then remove from the tins and cool completely on the racks.
For Frosting:
1: In a large bowl, cream butter and cream cheese until light and fluffy.
2: Mix in the vanilla. Add the sugar a few cups at a time, beating until fluffy.
To Decorate The Cake:
1: take one cake add the frosting and spread it, place the second cake on top add the frosting and spread, place the third cake and cover the cake with a thin layer of frosting.
2: keep in the fridge for 20 to 30 minutes.
3: then divide the frosting in 3 bowls add the colours mix well.
4: place the frosting in zip lock bags, and cut at the end of the bags.
5: Pipe a vertical line of dots on the side of your cake.
6: use spoon to press down on each dot, dragging to the right.
7: make another line of dots, just to the right of your petals. Repeat.
8: for the top of the cake, i did the same technique in circles.
9: serve and enjoy.
NOTE: it is a moist cake so it took me 50 minutes to bake.
