Chicken Marinade:
- 1 kg chicken thighs
- 2 tbsp lemon juice
- 2 tbsp oil
- 4 tbsp thick yogurt
- 2 ½ tbsp tomato puree
- 1 ½ tsp cumin powder
- 1 ½ tsp coriander powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp red chilli powder
- 1 tsp paprika powder
- ½ tsp black pepper powder
Sauce:
- ½ cup mayonnaise
- 4 tbsp tomato ketchup
- 4 tbsp chopped jalapeños
- 2 tbsp hot sauce
Caramelised Onions:
- 5 medium onions, thickly sliced
- 2 tbsp oil
Other Ingredients:
- 2 tsp oil
- Bread slices
- Cheese slices
- Tomatoes
- Lettuce
1. In a bowl, combine all ingredients for the chicken marinade. Mix well and let it marinate for at least an hour or overnight in the refrigerator.
2. In another bowl, mix together the ingredients for the sauce. Refrigerate until ready to use.
3. Heat oil in a pan and fry the onions over medium heat until caramelised. Set aside.
4. Heat a grill pan, brush with oil, and place the marinated chicken thighs. Grill on both sides until grill marks appear, then cover and cook on low heat until chicken is tender, about 8 to 10 minutes.
5. Warm the bread slices on the grill pan, brushing with a little oil or butter.
6. To assemble the burger, spread the prepared sauce on one slice of bread, add lettuce, tomatoes, grilled chicken, and caramelised onions. Top with a slice of cheese and cover with another bread slice.
7. Serve the grilled chicken burger hot with fries and your favourite beverages.
