Ingerdients:
Date Cake:
1: 1&1/2 cup pitted, chopped dates
2: 1 teaspoon baking soda
3: 1 cup boiling water
4: 1 cup boiling buttermilk
5: 150g butter
6: 1 cup brown sugar
7: 1 teaspoon vanilla extract
8: 2 eggs
9: 2&3/4 cup flour
10:1/2 teaspoon salt
11:1&3/4 teaspoon baking powder
Caramel Sauce:
1: 1 cup brown sugar
2: 1&1/4 cup cream
3: 1/2 teaspoon vanilla extract
4: 1/2 cup butter
Maple Cinnamon Buttercream:
1: 100g butter
2: 450g cream cheese
3: 1 tablespoon maple syrup
4: 2&1/2 cups powdered sugar
5: 1 teaspoon vanilla extract
6: 1&1/2 teaspoon cinnamon
Recipe:
1: Preheat oven to 350f, 180c, gas mark 4.
2: grease the cake tin add a little flour spread evenly and remove extra.
3: Bring water and buttermilk to a boil. While waiting, chop dates and place into a bowl with baking soda. Pour boiling water and milk over dates, briefly stir, then let sit for 20 minutes.
4: In a separate bowl, beat butter and sugar until creamy, about 4 minutes.
5: Add eggs one at a time and vanilla.
6: In a separate bowl, mix flour, salt and baking powder together.
7: Slowly add the dry ingredients and the date mixture (alternating between the two) to the butter and eggs. (1/3 dry, then 1/2 dates, then 1/3 dry, 1/2 date, 1/3 dry.)
8: add the mixture in the cake tin and bake till a knife inserted comes out clean.(15 to 20 minutes)
Caramel Sauce:
1: Place all ingredients in a sauce pan over medium heat and bring to a boil, stirring constantly, then reduce heat to low and let simmer for 2 minutes.
2: when the cake is out of the oven pour the sauce on the cake.(keep a side to cool).
Buttercream:
1: Beat butter and cream cheese for 4 minutes. Then add maple syrup (or honey), powdered sugar, vanilla and cinnamon.
2: then spread the mixture over the cake.
3: sprinkle extra cinnamon powder.
4: serve and enjoy.
