For Cake:
1: unsalted butter 226g
2: coffee 2 tbsp
3: boiling water 1 cup
4: plain flour 2 cups
5: granulated sugar 2 cups
6: salt 1/4 tsp
7: baking soda 2 tsp
8: buttermilk 1/2 cup
9: eggs 2 (room temperature)
10: vanilla essences 1 tbsp
Filling:
1: cream cheese 200g
2: icing sugar 1 cup
3: heavy cream 1 cup
Coffee Icing:
1: unsalted butter 3/4 cup
2: coffee 1 tbsp
3: cream 1/4 cup
4: icing sugar 4 cups
5: vanilla essences 2 tsp
NOTE: Preheat Oven 350f, 180c, gas mark 4.
1: grease and flour 3 8 inch cake tins.
2: sieve flour, salt, baking soda and mix with a spoon and then add the sugar mix well, keep aside.
3: in a bowl add vanilla essences, eggs, butter milk mix well and keep aside.
4: in a pan add butter and melt, then add coffee and hot water mix well, remove it from the flame.
5: now add the melted butter mixture in the dry ingredients and mix well, till combined.
6: then add the egg mixture in the batter and mix well again.
7: transfer the batter in the cake tins pick the tins and hit it on the surface, this will release any air bubbles and bake it for 20 to 22 minutes or till the cake is done.
8: once the cakes are baked leave to cool completely.
9: in a bowl add cream, powder sugar, cream cheese and beat till gets thick.
10: place the cake add the filling on each layer as shown in the video, keep it in the fridge for 30 minutes.
11: in a pan add butter and melt it, then add coffee, cream mix well, then add the vanilla, powder sugar mix and leave it for 3 to 4 minutes.
12: now drizzle the frosting over the cake and leave it till the frosting sets.
13: serve and enjoy.
