For the Filling:
- 1 tbsp oil
- 1 medium onion, finely chopped
- 8 garlic cloves, finely chopped
- 1 spring onion, chopped
- 2 small carrots, grated and excess water squeezed out
- 400g chicken mince
- 1 tbsp dark soya sauce
- 1 tsp salt
- 1 tsp black pepper powder
- 2 tbsp coriander leaves, chopped
Other Ingredients:
- 12 Turkish green peppers, cleaned and deseeded
- Spring roll sheets (two for each pepper)
- 1 egg, beaten
- Cheese, as needed
- Oil for frying
1. Heat oil in a pan and fry the onion and garlic until softened.
2. Add the spring onion, carrots, and chicken mince. Stir well.
3. Mix in the dark soya sauce, salt, and black pepper. Cover and cook over medium heat.
4. Once cooked, add the coriander leaves, transfer the mixture to a plate, and let it cool completely.
5. Prepare the peppers by cleaning and deseeding them.
6. Stuff each pepper with the chicken filling and cheese, then wrap them with spring roll sheets. If the peppers are too long, trim the bottoms and use two sheets for each pepper.
7. Heat oil in a pan and fry the stuffed peppers until golden and crisp on high heat.
8. Serve hot with Sweet Chilli Sauce.
