For Chicken Kofta:
1: boneless chicken 1 kg
2: onions 2 medium
3: green chilli 5
4: ginger & garlic paste 1 & 1/2 tbsp (heaped)
5: red chilli powder 1 & 1/2 tsp (levelled)
6: salt 1 & 1/2 tsp (levelled)
7: coriander seeds 2 tsp (dry roasted & crushed)
8: cumin powder 2 tsp
9: garam masala powder 1 tsp
10: dry roasted whole black grams 1 cup (kalay Chaney) (grind to a powder) or gram flour 1 cup (dry roasted)
For Pulao:
1: oil 1 cup
2: black cardamom 3
3: black peppercorns 10
4: cloves 6
5: green cardamom 7
6: cinnamon sticks 4
7: cumin seeds 1 tbsp
8: onion 1 large (finely sliced)
9: ginger & garlic paste 2 tbsp
10: tomatoes 7 medium
11: salt 1 & 1/2 tbsp
12: red chill powder 2 tbsp
13: dry plums 15 (washed & soaked in 1/2 cup water) (Aloo Bukhara)
14: bullit green chilli 8
15: rice 1 kg
16: water 1 & 1/2 literes
1: in a chopper add all ingredients under kofta and grind to a smooth mince (leave the gram flour).
2: place the mixture in a bowl and add the gram flour and mix well.
3: grease your palms and make balls as shown in the video.
4: heat oil and add the balls in it, fry on medium flame till gets golden, remove and keep aside.
5: heat oil add black cardamom, black peppercorn, cloves, green cardamom, cinnamon stick, cumin seeds, onion and fry on high flame till the onions change colour, add 1 cup of water and mix.
6: now add ginger & garlic paste fry it for 3 minutes.
7: then add tomatoes, salt, red chilli powder and cook on high flame till the tomatoes reduce.
8: add dry plums, fried kofta and mix well and cook on high flame till the oil comes on the surface.
9: add green chilli, rice, water 1 & 1/2 litres mix and cook on high flame till the water dries, then cover the lid with a tea towel and place the pot on a tawa, for first 5 minutes you keep the rice on high flame and then simmer it for 15 to 20 minutes on low flame.
10: serve hot enjoy.
