Masala Powder:
- 1 tbsp fennel seeds
- 1 tbsp cumin seeds
Other Ingredients:
- 1/3 cup oil
- 1 1/2 tsp cumin seeds
- 1/2 tsp asafoetida
- 1 large onion, finely chopped
- 3 large tomatoes, sliced
- 2 tsp crushed red chilli
- 1 tsp paprika powder
- 1 1/2 tsp salt
- 1 tsp turmeric
- 1/2 cup water
- 1 kg potatoes
- 1 medium tomato
- 2 bullet green chilies
- 1 tsp garam masala powder
- Handful of fresh coriander
- 1 bullet green chilli
1. Dry roast fennel seeds and cumin seeds, then grind them into a powder.
2. Heat oil in a pan, add cumin seeds, asafoetida, and onions. Fry on high flame until onions turn light golden.
3. Add tomatoes, crushed red chilli, paprika powder, salt, turmeric, and water. Mix well, cover, and cook on low to medium heat until the oil separates.
4. Add potatoes, mix, and cook for 3 minutes on high flame.
5. Add the roasted powder mixture, mix, and cook for an additional 2 minutes on high flame.
6. Now add tomato, green chilli, and 1 cup of water. Mix, cover, and cook on low to medium heat until the potatoes are tender and the oil separates.
7. Add garam masala powder, fresh coriander, and bullet green chilli. Mix well.
8. Serve hot with Roti or Paratha.
