For Baray:
1: gram flour 2 cups (sieved)
2: water for batter
3: baking soda 1/2 tsp
4: salt 1/2 tsp
5: turmeric 1/4 tsp
6: garlic paste 1/2 tsp
7: cumin seeds 1/2 tsp (dry roasted and crushed)
8: red chilli powder 1/2 tsp
9: oil for frying
For Serving:
1: thick greek yogurt 1 kg
2: milk 1 cup
3: sweet imli (Tamarind) chutney (as much required to taste)
4: red chilli powder 1/4 tsp
5: chaat masala 1/2 tsp
6: salt 1/2 tsp
1: in a bowl add gram flour, red chilli powder, baking soda, cumin, turmeric, salt, garlic paste, water mix well, the texture needs to be thick not liquid.
2: heat oil add the batter with a tbsp for each baray, fry till golden on low to medium flame, once fried keep on paper low.
3: now take a large bowl and add warm water, place the baray in it soak for 15 to 20 minutes, till gets soft.
4: for serving: in a bowl add yogurt, salt, milk mix well.
5: then take each baray squeeze the water and place them in a dish top it with yogurt, imli chutney, red chilli, fresh coriander, chaat masala.
6: serve and enjoy.
