For Making Crust:
1: plain flour 2 & 1/2 cups
2: sugar 2 tbsp
3: salt 1/2 tsp
4: milk 1/2 cup
5: oil 1/2 cup (I used extra light olive oil)
For Filling:
1: sugar 1 cup
2: corn starch 3 tbsp or (plain flour)
3: cinnamon 1/2 tsp
4: raisins 1/3 cup
5: apples 1 & 1/2 kg
For Topping:
1: sugar 1 tbsp
2: milk 1 tbsp
Preheat Oven To 400f, 200c, Gas Mark 6.
1: combine flour, sugar, and salt in a bowl.
2: stir in milk & oil all at once and combine using a fork. Shape into a ball by hand (no need to knead the dough).
3: divide dough in two. Shape each into a 5-inch disc. Wrap one in wax paper, keep it in the fridge.
4: peel, quarter & core apples. Cut into 1/2 inch chunks.
5: then combine sugar, corn starch, and cinnamon powder, raisins in a large bowl mix well.
6: roll the larger half between floured wax paper into a circle and place into the pie pan. Patch where needed, trim edges, and (add leftover dough to the other half).
7: place in the prepared apple mixture in the pie pan.
8: roll top pastry between floured wax paper and place on top of the pie.
9: now brush top with milk & sprinkle with sugar, avoiding the rim of the pastry.
10: poke about 12 slits in the top using a sharp knife, Place on baking tray in case of spills.
11: cover the edges of the pie with foil paper as i did in the video.
12: bake for 50 minutes. leave to Cool completely.
13: serve with ice cream.
NOTE: if the pie top starts to get brown fast, just cover it with foil.
