1: oil 1/3 cup
2: potatoes 1 kg (pealed & cut in cubes)
3: ginger & garlic paste 1 & 1/2 tbsp
4: salt 1 & 1/2 tsp
5: crushed red chilli 3 tsp
6: turmeric 1/2 tsp
7: garam masala powder 1 tsp
8: cumin seeds 2 tsp (dry roasted & crushed)
9: coriander seeds 2 tsp (dry roasted & crushed)
10: tomatoes 4 large (grind)
11: fresh ginger 2 inch (Julian cut)
12: bullet green chilli 4 (cut in half)
13: dry fenugreek leaves 1 tbsp
14: fresh coriander handful
1: heat oil add the potatoes and fry on high flame for 3 minutes.
2: then add ginger & garlic paste, salt, crushed red chilli, turmeric, garam masala powder, cumin, corainder mix well and add tomatoes, water 1/2 mix cover and cook on medium flame till the potatoes are tender and oil seperates.
3: now add ginger, green chilli, dry fenugreek leaves mix and simmer on low flame for 3 minutes.
4: add fresh corainder mix.
5: serve hot with roti, paratha.
