1: plain flour 1 & 2/3 cups
2: sugar 1 & 1/2 cups
3: salted butter 250g
4: baking powder 2 & 1/2 tsp
5: milk 200ml
6: eggs 4 (separated)
7: cocoa powder 1/3 cup
8: semisweet chocolate 40g
9: white chocolate 3 pieces (grated)
10: 2 loaf tins 9 by 5 inch (greased and flour)
Preheat Oven 350f, 180c, gas mark 4.
1: in a pan melt butter over low heat.
2: add sugar, cocoa powder, milk and stir to combine, bring to a boil for 1 minute and remove from heat.
3: to make the topping: in a bowl add the chocolate pieces and add 1 cup of hot cocoa syrup mix well and keep aside.
4: in a bowl add the egg whites and beat till foamy, keep aside.
5: now the cocoa syrup that was made earlier should have cooled, add the egg yolks to it and beat till combined.
6: add in the sieved plain flour, baking powder and beat well.
7: gently fold the whipped whites into the batter and fold it in.
8: divide the batter in the loaf tins and bake for 30 to 35 minutes or till toothpick inserted in the centre of the cake comes out clean.
9: once baked leave to cool for a few minutes and then remove it from the tins and place on a serving dish, add the chocolate topping on cakes and sprinkle the white chocolate.
10: serve and enjoy.
