Filling:
- 1 & 1/2 tbsp oil
- 1 tsp cumin seeds
- 1 medium onion, finely chopped
- 3 green chillies, chopped
- 1/2 cup peas, frozen
- 1/2 tsp red chilli powder
- 1 tsp crushed red chilli
- 1/2 tsp garam masala powder
- 1 tsp crushed coriander seeds
- 1 tsp salt
- 1/4 tsp carom seeds
- 2 tsp dry fenugreek leaves
- 1 tbsp lemon juice
- 450g potatoes, boiled & mashed
- 3 tbsp coriander leaves
Other Ingredients:
- Frozen parathas (as needed)
- Egg
- Mozzarella cheese (as needed)
1. Preheat the oven to 180°C (350°F) Gas Mark 4.
2. Heat oil in a pan, add cumin seeds, onion, and green chilli. Fry until the onions soften on medium to high flame.
3. Add peas, red chilli powder, crushed red chilli, garam masala powder, crushed coriander seeds, salt, carom seeds, dry fenugreek leaves, and lemon juice. Mix well on medium flame.
4. Add mashed potatoes and coriander leaves. Mix well and transfer to a plate to cool.
5. Defrost the parathas and divide each in half. Add the filling and cover, pressing the sides firmly. Optionally, add mozzarella cheese along with the filling.
6. Beat an egg and brush it on the parathas. Place them on a baking tray.
7. Bake in the preheated oven for 20 to 25 minutes.
8. Serve hot with your choice of sauce.
