For Chicken Filling:
- 500g boneless chicken, cut into small pieces
- 2 tbsp vinegar
- 1 tsp paprika powder
- 1 tsp red chilli powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1 tsp cumin powder
Other Ingredients for Filling:
- 3 tbsp oil
- 1/2 cup water
White Sauce:
- 2 tbsp salt
- 1 & 1/2 tbsp plain flour
- 1 cup milk
- 1 tsp crushed red chilli
- 1/4 tsp salt
- 1/2 tsp white pepper
- 2 tbsp cream
- 1/3 cup mozzarella cheese
- 1 small red bell pepper, deseeded & chopped
For Dough:
- 2 & 1/2 cups plain flour
- 1 egg
- 1 tsp salt
- 1 tsp sugar
- 1 tbsp yeast
- 1 cup warm milk
Other Ingredients for Buns:
- 1 egg
- 1 tsp sesame seeds
- 1/3 to 1 cup mozzarella cheese
- 1 tbsp melted butter
1. Preheat the oven to 180°C (350°F, gas mark 4).
2. In a bowl, mix the chicken with all the ingredients listed under chicken filling and let it marinate for 20 minutes.
3. Heat oil in a frying pan, add the marinated chicken, and cook until it changes colour. Then, add 1/2 cup of water, cover, and cook over low to medium heat until the chicken is tender and the oil separates.
4. In another frying pan, melt butter, add plain flour, and cook for 1 minute.
5. Slowly add milk to the flour mixture while continuously stirring to avoid lumps. Keep the flame low and add crushed red chilli, salt, white pepper, cream, and mozzarella cheese. Mix well, then add the cooked chicken and chopped bell pepper. Set aside.
6. To make the dough, in a large bowl, mix all the ingredients listed under dough and knead until smooth. Place the dough in a greased bowl, cover, and let it rise in a warm place until it doubles in size.
7. Once the dough has doubled in size, punch it down to remove excess air. Divide it into 6 equal parts and shape them into round balls.
8. Place the dough balls on a greased baking tray. Use a glass to press down in the middle of each ball.
9. Brush egg around the dough, sprinkle sesame seeds, and fill the centre with the prepared chicken filling. Top with mozzarella cheese.
10. Bake in the preheated oven for 15 to 20 minutes.
11. Brush melted butter around the edges of the hot buns.
12. Serve hot and enjoy your delicious Open Chicken Buns!
