1: plain flour 2 cups
2: icing sugar 1 cup
3: almonds 1 cup (roast it in the oven and lightly crush it)
4: clarified butter 1 cup (melt it and then keep it in the freezer for 1/2 hour)
5: egg yolks 2
6: green cardamom powder 1ts
7: gram flour 3 tbs
8: baking soda 1/2 ts
9: baking powder 2 ts (level)

11:cookie cutter (any size or shape)
1: in a bowl sift the icing sugar, plain flour, baking powder, baking soda, gram flour so that they are no lumps and mix it well and keep aside.
2: in a separate bowl whisk the butter till soft and smooth.
3: preheat the oven 150c, gas mark 2, 300f.
4: now mix the whisked butter with the dry flour mix and the green cardamom powder, crushed almonds mix well and with a rubbing motion mix well, so that all the ingredients mixes well for a minute.
5: then dust the surface and press down flat the dough or roll it with a rolling pin, 1/4 inch thick.
6: with the cutter cut the dough and place it on the greased tray, whisk the egg yolks and brush the dough and bake it for 15 minutes.
7: once baked place it on the cooling rack when cooled store it in air tight box.
