- 1 kg of rice (washed & soaked for 20 minutes)
- 1 cup of khoya (try my instant homemade Khoya Recipe, if possible)
- 800g of sugar
- 1 cup of blanched almonds
- 1/2 cup of pistachios
- 1/2 cup of raisins
- 1/2 cup of shredded coconut
- 1/2 cup of tutti frutti
- 2 star anise pods
- 8 green cardamom pods
- 8 cloves
- 2 tbsp of kewra water
- 1/2 tsp of food colouring (red, green, orange)
- Assorted sweets for garnishing (e.g., chum chum, gulab jamun)
- 1 cup of water
- 240ml of cooking oil
1. In a large pot, bring water to a boil with the two star anise pods. Once boiling, add the washed rice and cook until it's 97% done. This usually takes about as long as shown in the video.
2. When the rice is tender, drain it thoroughly to ensure there's no excess water, and set it aside.
3. In separate bowls, prepare the three food colours by adding water to each and mixing in 3 tablespoons of boiled rice into each colour. Set these coloured rice portions aside for later use.
4. In a large pan or wok, heat the cooking oil over high heat. Add the green cardamom pods, cloves, and dry fruits. Stir-fry for about 1 minute until fragrant.
5. Add the sugar and water to the pan. Cook until the sugar completely dissolves, which should take approximately 4 minutes.
6. Incorporate the boiled rice into the sugar mixture and mix well.
7. Cook over high heat until the sugar-water mixture dries up.
8. Add the kewra water to enhance the aroma. Also, add the drained coloured rice, khoya, and tutti frutti. Cover with a lid and simmer on low heat for about 15 minutes to allow the flavours to meld.
9. Garnish the dish with assorted sweets and additional khoya if desired.
10. Serve and enjoy your colourful sweet rice!
