For Marination:
1: chicken 1 kg
2: thick greek yogurt 1/2 cup
3: fresh coriander 1 small bunch, mint 1 small bunch, green chilli 8(grind)
4: cream 1/2 cup
5: oil 2 tbsp
6: lemon juice 2 tbsp
7: crushed black pepper 1 & 1/2 tbsp
8: salt 2 tsp
9: red chilli powder 2 tsp
10: cumin seeds 3 tsp (dry roasted & crushed)
For Masala:
1: onions 2 medium (grind)
2: tomatoes 3 large
3: oil 1/2 cup
4: ginger & garlic paste 2 tbsp
Others:
1: rice 1 kg (boiled 80% with salt 1 tbsp, star anise 1, cloves 8, green cardamom 4, black pepper corn 12, cumin seeds 1 & 1/2 tsp, black cardamom 2, cinnamon stick 1)
2: green chilli 3 (chopped)
3: yellow food colour 1/4 tsp
4: kewra water 2 tbsp
5: fresh coriander handful
6: fresh mint 1/2 cup
7: coals to smoke the curry
1: marinate chicken with all the ingredients, under marination mix and leave t for 2 hours.
2: heat oil add onion, ginger & garlic paste and fry till changes colour on high flame.
3: add the tomatoes and cook on high flame till the oil comes on surface.
4: then add the marinated chicken and wait for a boil on high flame, then cover and cook on medium flame till the chicken is tender and oil comes on surface.
5: heat the coals and smoke the curry as showen in the video.
6: transfer the curry in a larger pot, top it with rice, green chilli, food colour mixed with kewra water, mint, corainder, cover the lid with a tea towel and place it on the pot, keep the biryani in the stove, first 5 minutes high flame and then simmer on low flame for 15 minutes.
7: serve hot and enjoy.
