For Dough:
1: semolina 500g (fine)
2: plain flour 1 & 1/2 cup
3: unsalted butter 150g or ghee (melted)
4: vegetable oil 1/2 cup
5: milk powder 1/2 cup
6: powder sugar 1 cup
7: nutmeg 1 tsp
8: baking powder 1/2 tsp
9: salt 1/2 tsp
10: milk 1/4 cup
11: vanilla extract 1 tbsp
12: instant dry yeast 1tsp
13: sugar 1 tsp
14: water 1/4 cup
15: rose water 1/4 cup
For Filling:
1: soft dates 500g (deseed)
2: vegetable oil 2 tbsp
3: pistachio 250g
4: sugar 6 tbsp
5: water 3 tbsp
Reheat Oven 230c, 450f, Gas Mark 8.
1: in a bowl add semolina, butter, oil mix well, cover and leave over night.
2: mix water, sugar and sprinkle the yeast on top, let to rest till gets frothy.
3: now add plain flour, milk powder, powder sugar, nutmeg, baking powder, salt, mix well.
4: then add milk, vanilla, yeast mixture, rose water and mix well, cover and leave it for 1 hour.
5: add the pistachio in a chopper and blend till, place it in a bowl and add sugar, water and mix well, make small balls, cover and keep aside.
6: add the dates in a chopper and blend till smooth, place it in a bowl add the oil and mix well, make small balls, cover and keep aside.
7: take the dough and make a small ball, flatten it on your palms, add the filling and cover it well, now follow the process as shown in the video or different fillings, place on a baking tray and bake for 10 to 15 minutes or till golden on the top.
8: once baked leave to cool, dust powder sugar.
9: serve and enjoy.
