1: chicken 1 kg
2: cloves 4
3: cinnamon stick 1 piece
4: black peppercorn 8
5: cumin seeds 1 tsp
6: black cardamom 2
7: green cardamom 4
8: red chilli powder 1 tsp
9: coriander powder 1 tbsp
10: nutmeg 1/4 tsp
11: mace 1/4 tsp
12: salt 1 & 1/2 tsp
13: green cardamom powder 1/4 tsp
14: fried onions 1 cup
15: thick greek yogurt 1 cup
16: kewra water 1 tbsp
17: fresh ginger 1 inch piece (Julian)
18: ginger & garlic paste 1 & 1/2 tbsp
19: oil 1 cup
20: garam masala powder 1/2 tsp
1: in a bowl mix yogurt, fried onions, salt, red chilli, coriander powder, ginger & garlic paste.
2: heat oil add cloves, black pepper corn, cumin seeds, black cardamom, green cardamom, cinnamon stick, yogurt mixture, cook on medium to high flame for 5 minutes.
3: add the chicken and fry for 2 to 3 minutes, on high flame.
4: now add water 2 to 3 cups, wait for a boil on high flame, cover and cook on low to medium till the chicken is cooked.
5: then add nutmeg, mace, kewra, green cardamom powder, garam masala powder, fresh ginger mix and simmer on low flame for 3 to 4 minutes.
6: serve hot with Naan.
