Ingerdients:
1: LAMB MEAT OR CHICKEN, 2KG.
2: THICK YOGURT, 1 1/2. CUP.
3: LARGE ONION, 5 & FINNLY CHOPPED.
4: GINGER & GARLIC PASTE, 2 Tbsp.
5: CRUSHED RED CHILLI, 1 Tbsp.
6: ZEERA (cumin) POWDER. 1Tsp.
7: SALT 2Tsp.
8: CORIANDER (DHNIA) POWDER 1 Tsp.
9: TURMERIC (haldi) POWDER, 1/4 Tsp.
10:GREEN CHILLI 3 TO 4.
11:DRIED RED CHILLI 4 TO 5.
12:GREEN ILAICHI (green cardamom) 4 TO 5.
13:BIG ILAICHI (black cardamom) 2.
14:DALCHINI (Cinnamon stick) 2 INCH.
15:BLACK PEPPER (kali mirch) HALF Tsp.
16:CLOVES (long) 10 TO 15.
17:GREEN CHILLI 2 TO 3 FOR GARNISHING.
18:FRESH GINGER SLICE, 2 INCH FOR GARNISHING.
19:FRESH CORIANDER (DHANIA) HALF BUNCH.
20:FRESH LARGE TOMATOS, 4 TO 5.
21:GHEE OR OIL. QUATER CUP.
Recipe:
1: in a pan heat the oil add the onions, ginger & garlic paste, meat cook on high flame till the natural water of the meat drys.
2: once the water drys the add the whole red chilli, black pepper corns, cloves, green cardamom, black cardamom, Cinnamon stick, mix it then add crushed red chillies, cumin powder, coriander powder, turmeric, salt, green chillies, mix well then add the tomatoes, and yogurt again mix it.
3: when comes to a boil reduce the flame low to medium cover and cook till the oil comes on surface, and the meat is completely cooked.
4: once the water drys add fresh ginger, green chillies, fresh coriander mix well and bring the flame to high.
5: now serve hot with naan or roti.
