- 500g split chickpeas (boiled with 1 tsp turmeric and 3 glass of water)
- 1 kg mutton (boiled until tender with 4 glass of water and 1 tsp salt)
- 1 1/2 cups of stock from boiling the meat
- 4 large tomatoes (blended)
- 2 large onions (blended)
- 4 bullet green chilies (sliced)
- 2 tbsp ginger and garlic paste
- 2 tsp red chilli powder
- 2 tsp salt
- 1/2 tsp turmeric
- 1 tsp garam masala powder
- 1 tbsp coriander seeds (dry roasted and crushed)
- 4 black cardamom pods
- 2 cinnamon sticks
- 1/2 tsp cloves
- 3/4 cup cooking oil
- A handful of fresh coriander leaves
1. Begin by dry roasting the black cardamom pods, cinnamon sticks, and cloves. Once roasted, grind them into a fine powder.
2. Heat the cooking oil in a large pan over medium-high heat. Add the blended onions and ginger-garlic paste. Fry them until they turn golden brown.
3. Now, add the roasted spice powder, salt, turmeric, crushed coriander seeds, red chilli powder, garam masala powder, blended tomatoes, and 1/2 cup of the meat stock. Mix well and cook over medium heat until the oil begins to separate from the mixture.
4. Add the boiled mutton to the pan and cook for approximately 4 minutes, ensuring it's well coated with the masala on high heat.
5. Next, add the boiled chickpeas and mix well. Pour in the remaining meat stock, cover the pan, and let it simmer on low heat for 12 minutes.
6. Stir in the sliced green chilies and fresh coriander leaves.
7. Serve this flavourful dish hot with roti, naan, paratha, or rice.
