Marination:
1: mutton liver 1/2 kg
2: garlic 1 & 1/2 bulb (crushed)
For Frying:
1: ginger & garlic paste 2 tsp
2: lemon juice 4 tbsp
3: red chilli powder 1/2 tsp
For Curry:
1: onion 1 large (grind to a paste)
2: tomatoes 2 medium (grind)
3: thick greek yogurt 1 cup
4: coal to smoke the liver
5: tandoori masala powder 1 tbsp
6: garam masala powder 1/2 tsp
7: cream 3 tbsp
8: ginger & garlic paste 1 tbsp
9: salt 1/2 tsp
10: red chilli powder 1/2 tsp
11: cumin seeds 1 & 1/2 tbsp (dry roasted & crushed)
12: turmeric 1/2 tsp
13: bullet green chilli 3 (sliced)
14: oil 1/2 cup
15: fresh coriander leaves handful
1: marinate the liver with garlic, leave t for 45 to 1 hour, then wash it.
2: now take the washed liver and add the red chilli powder, lemon juice, ginger & garlic mix well.
3: heat oil and fry the liver for 5 minutes only, then take it out and keep it aside.(if you want you can mix it and leave it for further 1 hour).
4: the same oil heat it add cumin, onions fry on high flame till slightly changes colour.
5: add ginger & garlic paste, salt, turmeric, red chilli powder, tomatoes mix and cook on high flame till the tomatoes reduce and oil comes on surface.
6: now add the tandoori masala powder, garam masala powder, yogurt and again cook till the oil comes on surface on high flame.
7: heat the coal.
8: add cream mix and cook till the oil comes on surface.
9: now add the fried liver, coriander, green chilli mix and place the coal to smoke the liver.
10: serve hot with Roti, Tandoor Roti, lemon juice.
