For cake:
1: 2 eggs
2: 1 cup oil
3: 1 cup buttermilk
4: 1 tablespoon vinegar
5: 1 teaspoon vanilla
6: 4tbs green food colouring
7: 2 1/2 cups all purpose flour
8: 2 cups sugar
9: 1 &1/2 tablespoons cocoa powder
10:1/2ts salt
11:1ts baking soda
For icing:
1: 200g cream cheese
2: 1/4 cup butter (softened)
3: 120g white chocolate, broken into pieces and melted, cooled slightly, plus more for garnish
4: 1ts vanilla essences
5: 2 cups powdered sugar
To make cake:
1: Preheat oven to 350∫f, 180c, gas mark 4.
2: Prepare 2, 8-inch cake pans by greasing with butter, adding parchment paper circles to the bottom. Butter the papers and dust with flour, tapping out any excess.
3: In a large bowl, whisk together eggs, oil, buttermilk, vinegar, and vanilla. Then stir in food colouring.
4: In a separate bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Slowly whisk in the dry i ingredients to the egg mixture until completely combined.
5: Divide batter evenly between cake pans and then drop the pans on the counter a few times to release any air bubbles.
6: Bake for about 30 minutes, or until a toothpick inserted comes out clean. After about 10 minutes, remove from pans and cool completely on a wire rack.
To make icing:
1: In a large bowl using a stand or electric mixer, beat cream cheese and butter on medium speed.
2: Add melted chocolate and vanilla, and mix well.
3: Add sugar gradually, beating until fluffy.
To assemble:
1: Dab a bit of frosting onto the centre of a cake, Place on 1 layer of cake on top of frosting and press slightly down to secure it.
2: Using a spatula spread it over top until it starts to spill over the edges then spread over the sides of cake.
3: Garnish with white chocolate shavings.
